Gettin' my bake on - Anzac Biscuits


Hubby & little miss often ask me to make Anzac biscuits, for some reason I always think they are too difficult so don't bother....But as Anzac Day approaches and I try to be baketastic I thought why not!

Turns out they are easy and also delish.

For these you will need....

1 cup plain flour
1 cup rolled oats
3/4 cup desiccated coconut
3/4 cup caster sugar
125g butter
1 tablespoon golden syrup
1 1/2 teaspoons bicarb soda
2 tablespoons boiling water

Once you have gathered all of the above, you will need to do the following:
  1. Preheat oven to 150 degrees Celsius. Line two baking trays with baking paper.
  2. Place flour, oats, coconut and sugar in a bowl and mix until combined.
  3. Combine butter and golden syrup in a microwavable jug and microwave on high for about 30 seconds (this will differ depending on your microwave) until the butter is melted. Give it a stir.
  4. Mix the bicarb soda with boiling water, add to the melted butter and golden syrup. Be prepared as it will froth up.
  5. Add this to the flour mixture, stir until combined.
  6. Shape level tablespoons of mixture into balls and flatten slightly. Place onto the prepared trays, about 6cms apart.
  7. Bake for 15-20 minutes or until golden. Remove from the oven, stand for 2 minutes.
  8. Cool completely on a wire rack.
Now you can enjoy an Anzac bickie (or three) with a lovely cup of tea :)

The best smell in the world


As far as the five senses go, smell is my strongest. Sometimes fortunately, sometimes unfortunately.

I pity my children when they get older and try to get away with smoking or drinking! BAM, I'll smell it on ya kids.

There are so many smells that are so enticing. A favourite perfume or aftershave. Fresh flowers in the garden. Freshly mown grass. The smell of rain coming. Summer days. Salty oceans. New born babies.

Perhaps though my favourite smell is that of baking. I love the smell of freshly baking pastries, cakes, bread or biscuits. Mmmm, I can almost smell it now.

I just love when the kitchen is filled with the yummy goodness of baking smells. It also seems to entice the whole family to the kitchen, another plus!

Gettin' my bake on - Carrot Cookies

Still attempting to get a little baketastic....there is still a long way to go!

These cookies are freezable, which is one of the reasons I wanted to give them a go. Just wrap them individually in glad wrap and pop several of them in a zip-lock bag before putting them in the freezer. They will thaw in the kids lunchbox by recess.

They are also healthy :)

You'll need...

  • 1/2 cup plain flour
  • 1/2 cup wholemeal plain flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 3/4 cup rolled oats
  • 1 cup carrot, finely grated
  • 1/4 cup sultanas
  • 1/4 cup apricots, finely chopped
  • 2 tbsp desiccated coconut
  • 1 tbsp chia seeds
  • 1/2 cup apple sauce
  • 1/4 cup vegetable oil


Then you'll need to....

  1. Preheat over to 180 degrees Celsius. Line two baking trays with baking paper.
  2. Sift flours, baking powder and cinnamon into a bowl and mix.
  3. Stir in oats, carrot, sultanas, apricots, coconut, chia seeds and apple sauce.
  4. Stir through the oil until just combined.
  5. Take tablespoons full of mixture and roll into balls, place on the baking tray. Flatten each ball with a fork.
  6. Bake 20 minutes.
This mixture makes 24 small biscuits.
