This is a simple delish recipe that I first found on Recipe Community, so thought I would share it here too.
It is all the more awesome because it is made in the Thermomix and is gluten free! And it was loved by everyone.
For these you will need....
230 grams pumpkin, peeled and diced to 2cm
135 grams zucchini, peeled and diced to 2cm
4 eggs
40 grams macadamia oil
300 grams almond meal
2 teaspoons baking powder (gluten free of course)
pinch salt
pinch ground nutmeg
2 tablespoons pepita seeds (pumpkin seeds)
Once you have gathered all of the above, you will need to do the following:
Preheat the oven to 160C.
Line a loaf tin with baking paper.
Place the pumpkin in the thermomix bowl and chop 5 seconds / speed 5.
Add the zucchini to the bowl and chop 5 seconds / speed 5.
Add the eggs and macadamia oil to the bowl and combine / 5 seconds / speed 3.
Add almond meal, baking powder, salt and nutmeg and stir / 15 seconds / speed 5 (or until combined).
Spoon the mixture into the loaf tin and sprinkle with pumpkin seeds.
Place the loaf tin in the oven.
After 1 hour, insert a skewer into the middle of the loaf. If it doesn't come out clean, continue cooking for another 15-25 minutes.
Note: I find that leaving gluten free loaves a little under cooked works better.
